1 Tbsp. olive or avocado oil
2-3 cups chopped veggies (Healthy 8 Chopped Veggie Mix from Trader Joe’s works well. Found in the produce section)
2 cups chicken broth
1 cup water
1-2 cups spiralized butternut squash, sweet potato, or zucchini (you can buy these ready-made at TJ’s too)
2 cups chopped cooked chicken
Spices to taste: salt, pepper, garlic powder, onion powder, cayenne pepper, Italian seasoning
Saute veggies in oil until crisp-tender. Add broth, water, squash, and spices, bring to a boil, then turn down to a simmer for 10 minutes. Add chicken and heat through. That’s it!
